Blueberry Muffins Ingredients
- 1 1/2 cup plain flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh blueberries
- 1/2 cup sugar
- 1/3 cup plain flour
- 1/4 butter (cubed)
- 1 1/2 cinnamon
How it’s done
- Preheat oven to 100 degrees C. Prepare muffin tins
- Combine 1 1/2 cups of flour, 3/4 cups of sugar, salt and baking powder
- Fill a cup to the 1/3 mark with vegetable oil, add your egg and then fill the rest of the way up with milk until you have a full cup. Mix this with the dry ingredients
- Fold in the blueberries
- Fill your muffin cups right to the top and sprinkle with the crumb topping
To make crumb topping: Mix 1/2 cup of sugar, 1/3 cup of flour, 1/4 cup of butter and 1 1/2 teaspoons of cinnamon. Mix with a fork or crumble with your fingers.
Bake for 20-25 minutes or until done.
