Blueberry Muffins Ingredients

  • 1 1/2 cup plain flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/3 cup plain flour
  • 1/4 butter (cubed)
  • 1 1/2 cinnamon

How it’s done

  1. Preheat oven to 100 degrees C. Prepare muffin tins
  2. Combine 1 1/2 cups of flour, 3/4 cups of sugar, salt and baking powder
  3. Fill a cup to the 1/3 mark with vegetable oil, add your egg and then fill the rest of the way up with milk until you have a full cup. Mix this with the dry ingredients
  4. Fold in the blueberries
  5. Fill your muffin cups right to the top and sprinkle with the crumb topping

To make crumb topping: Mix 1/2 cup of sugar, 1/3 cup of flour, 1/4 cup of butter and 1 1/2 teaspoons of cinnamon. Mix with a fork or crumble with your fingers.

Bake for 20-25 minutes or until done.
