Although cinnamon is a flavour traditionally associated with winter and Christmas, I have to admit I love these Apple Muffins with Caramel and think they taste good all year round. Super simple to make and a brilliant dessert option if you are having a dinner gathering.
Apple Muffins Ingredients
- 250g plain flour
- 225g caster sugar
- 1 tbsp baking powder
- 1tsp ground cinnamon
- 110ml sunflower oil
- 2 eggs
- 175ml milk
- 1 apple, peeled and diced
Caramel Ingredients
- 75g butter
- 2 tbsp sugar
- 2 tbsp water
- 3 apples, peeled and thickly sliced
How to:
Apple Muffins
- Heat the oven to 180c. Place paper cases into muffin tin. The recipe should make 12
- Sift the flour, sugar, baking powder and cinnamon into a mixing bowl
- In another bowl, mix the oil, eggs and milk until combined, Stir into the dry ingredients until only just combined and still lumpy
- Gently fold in the diced apple
- Spoon into the cases and bake for 20-25 mins until golden brown
- Leave to stand for 2 mins and then place on a wire rack to cool
Caramel Topping
- Heat the butter, sugar and water in a pan until the sugar has dissolved
- Bring the mixture to a boil
- Add the apple slices and cook for 2-3 minutes until soft and coated with syrup
- Place the muffins onto a plate and spoon the topping over them
